The sushi that many people recognize today, particularly “nigiri” (hand-formed rice topped with fish) and “maki” (rolled sushi), began to take shape in the 19th century. The innovation is attributed to Hanaya Yohei, a sushi chef in Tokyo (then Edo). Around the 1820s, Yohei developed a style of sushi that involved placing fresh fish atop vinegared rice, which was a significant departure from the fermented fish method. This style was designed to be quick to prepare and eat, catering to the fast-paced lifestyle of the bustling city.
